Introduction
 
I decided to introduce this column so my visitors can join me to learn more about Thai cooking. My recipes might be slightly different from the real Thai recipes, but only  because I adapted them to Melbourne's varieties of fresh food. As you all know that not every single ingredient is readily available when not in Thailand. With my experience from owning a Thai restaurant for 5 years I think I can share what I have learnt in a simple easy to understand format. In this column I hope that you will enjoy Thai cooking as much as me and enjoy the benefits of a good healthy diet!
 
 

Ingredients:
- Rice (don't know how to cook rice? click here)
- Your choice of protein( can be pork, beef, prawn, chicken or crabmeat.)
- your choice of vegetable. I like to use broccolis and tomatos.
- eggs
- spring onion(not necessary)
- garlic
- soy sauce

 
  Preparation :
1. Cut up some garlic finely, use about 2 little pieces.
2. Slice all the meet up in thin slices
3. cut all the vegetable
4. Mix soy sauce with sugar (for example 4 serve of fried-rice use about 3 table spoon of soy sauce and one little tea spoon of sugar) *add more sugar if you like it sweet, but try not to ha ha.


Instruction :
1. Put some oil in the wok then heat it up in high.
2. Wait  until the oil heat up then put garlic in, stir until they go a bit brown.
3. Put in the eggs and stir it up quickly until the egg go hard and yellow then follow through with the meat and stir until the meat half cook.
4. Add vegetable then soy sauce and stir through, wait until vegetable go soft.
5. put all the rice in the wok then stir through, this stage have test of your rice and put more soy sauce in if require.
6. Put in tomatoes at this stage so it won't go soft and yucky.

*tips :
1. cook your rice before the day and keep it dry in the frige to get the perfect fried-rice or to make it easy use your left over rice.
2. serve your fried-rice with fresh lemon or lime and squeeze it on before you start your meal and enjoy the Thai way of eating fried-rice.
